Pani Puri Paradise: Dive into the Irresistible Delight

Gol gappa (also known as pani puri) is a popular bite-sized chaat consisting of a hollow, deep-fried puffed ball that is filled with potato, chickpea, onion, spices, and flavored water, usually tamarind or mint, and placed in one’s mouth whole. This is mainly a street side food in Pakistan & India.

Puri for Pani Puri or Puchka Puri is a fried puffed crispy puri that forms the base of Pani Puri. They are filled with a spicy potato and black chickpea filling topped with spicy flavored water and then popped into the mouth in one go.

Ingredients for Gol Gappa

  • Flour (Chaki ka atta) 1 cup
  • Salt ¼ teaspoon
  • Water for kneading

How to Make:

  1. Mix salt in flour and knead it with water.
  2. Put the dough in a bowl and cover with a damp cloth for 2 hours.
  3. Shape the dough into small balls and roll them on a work surface dusted with flour. Roll out very thin, even if the surface is visible under the rolled dough.
  4. Cut out with a cookie cutter in the desired size. Cover it again with a wet cloth.
  5. Heat the oil in a wok. Keep the flame medium-high.
  6. When the oil is heated, add one puri to it and press it down with a frying spoon. It puffs up when you press, turn on one side, fry for a few minutes on the other side, and remove from the oil.
  7. In the same way, make all gol gappay.

Sweet chutney

Ingredients
  • Tamarind (Imli) pulp 1 cup
  • Jaggery/brown sugar ½ cup
  • Red chili powder 1 tsp
  • Crushed roasted cumin ½ tsp
  • Salt to taste
Instruction

Add tamarind pulp, jaggery/brown sugar, red chili powder, cumin, and salt to the pan. Cover and cook until thickened.

Red chutney

Ingredients
  • Water 1 cup
  • Sugar ¼ cup
  • Dates 50 g (remove seeds)
  • Red chili powder 1 tsp
  • Crushed roasted cumin ½ tsp
  • Salt to taste
  • Red food coloring 1 pinch
Instruction
  1. Cook all the red chutney ingredients until slightly thickened.
  2. Allow to cool and rub into a smooth paste.

Sour water (Khata Pani)

Ingredients
  • Cold water 1 liter
  • Thick tamarind pulp 1 cup
  • Roasted cumin powder ½ tsp
  • Black salt (kala namak) ½ tsp
  • Red chili powder ½ tsp
  • Black pepper powder ½ tsp
  • Dry ginger powder ¼ tsp
  • Chaat masala 1 tsp
  • Salt to taste
Instruction

Mix all ingredients in water. Add ice if needed.

How to Eat Pani Puri

Make a hole in Gol Gappa from one side and insert all given ingredients in the rounded Gol Gappa. Now fill this Gol Gappa with sour water and eat at once.
